Baked Pumpkin Pie Oatmeal
Adapted from Jamie Cooks it up
2 cups old fashioned oats
1/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon allspice
1/8 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon salt
2 teaspoons vanilla
2 tablespoons butter, softened
1 1/2 cups canned pumpkin
1 1/2 cups milk
Crumble Topping:
1/2 cup butter, softened
1 cup brown sugar
1/3 cup flour
1/2 cup old fashioned oats
Preheat oven to 350 degrees.
Into a large mixing bowl combine oats, sugar, cinnamon, allspice, nutmeg and salt. Mix well.
Add vanilla, butter, canned pumpkin and milk. Mix well.
Spray a 9 x 13 pan with cooking spray. Spread mixture evenly into the pan.
Bake for 12 minutes.
While the oatmeal is baking make the topping.
Mix all topping ingredients together with a pasty blender.
After 12 minutes top oatmeal with crumble topping.
Bake another 10 minutes.
Let sit for 5 minutes before serving.
